Most coffee beans in stores have been sitting around for weeks—likely months. Sure, fresh isn't necessarily always better. But, coffee begins to lose its peak flavour about 5-6 weeks after roasting. Plus, it stays very stable for a long time after that point - don't get rid of your old coffee! When you buy direct from a small-batch roaster, you’re getting coffee at its absolute peak, or even sooner, allowing you to decide how fresh you want your coffee to be.
That means your cup will have more dynamic and complex flavours—not the dull, bitter notes of stale coffee beans that have possibly been sitting in a warehouse for months and months.
