There's nothing wrong with this, but what does freshness truly mean for coffee beans? Is coffee at its best right after it’s roasted, or does it benefit from a bit of rest? Let’s explore the “mythology of freshness” and uncover the truth about when coffee is at its peak flavour.

The Science Behind Freshly Roasted Coffee

When coffee beans are roasted, a chemical transformation takes place. The heat drives out moisture, caramelizes sugars, and creates the complex flavour compounds we love. During this process, gases—primarily carbon dioxide—become trapped within the beans. Once roasted, these gases begin to escape in a process called degassing.

Right out of the roaster, coffee beans are bursting with carbon dioxide and other volatile compounds. This can sometimes result in a slightly harsh or uneven flavor profile when brewed. That’s why most coffee professionals recommend allowing the beans to rest, or “cure,” for a period of time after roasting.

How Long Should Coffee Rest After Roasting?

The ideal resting time varies depending on the type of coffee, roast level, and personal taste preferences.

  • Light Roasts: These tend to benefit from a longer resting period—up to 7-10 days—to allow the flavors to fully develop and mellow.
  • Medium Roasts: Often hit their sweet spot between 3-7 days post-roast.
  • Dark Roasts: These are typically drinkable sooner, as the roasting process breaks down more of the bean’s cellular structure, allowing for quicker degassing.

For espresso enthusiasts, the resting period can be even more critical. Too much trapped gas in the beans can disrupt the extraction process, leading to inconsistent shots with excessive crema or sour notes.

The Myth of Same-Day Freshness

While freshly roasted coffee is undeniably aromatic, drinking it immediately after roasting might not yield the best cup. The flavours can be overpowering, muddled, or even a bit grassy. Resting the beans gives them time to shed excess gas and allows the more nuanced flavours to emerge.

Our freshly roasted beans are typically at their peak within a 5-10 days after roasting and maintain optimal flavour for several weeks when stored properly. In fact, we've tested our beans and if they remain in our sealed, valved bags they stay quite fresh for up to three months before we noticed any significant degradation in flavour. 

But of course, we always ship out our beans as fresh as possible so you can decide for yourself if you want to rest them or drink them right away.

How to Store Freshly Roasted Coffee

Even after the resting period, proper storage is key to preserving freshness. Here are a few tips:

  1. Use Airtight Containers: Oxygen is coffee’s enemy. Invest in a container with a one-way valve to let gas escape without letting air in.
  2. Keep It Cool and Dry: Avoid storing coffee in the fridge or freezer, as temperature fluctuations can cause moisture buildup. A cool, dark pantry is ideal. The fridge can allow aromas and flavours to influence the beans and vice versa. The freezer works well for long-term storage, but make sure you bring the beans to room temperature before grinding and brewing them.
  3. Grind Just Before Brewing: Whole bean coffee retains its freshness longer than pre-ground coffee. Grinding right before you brew ensures maximum flavour. This is an absolute must for us! It's why we specialize in whole bean coffee.

While coffee does have a “peak” period, it’s also highly subjective. Some people prefer the vibrancy of beans closer to their roast date, while others enjoy the smoother, more balanced flavorus that develop with a bit of age.
