This Grade 1 Ethiopian coffee boasts a score of 88 points and an incredible flavour profile.

If you didn't know, coffee is graded on a scale from 1 - 100 and to be considered "Specialty Coffee" it has to score at least 80 points. Most coffee over 90 points is incredibly rare and prohibitively expensive. That's why we are so stoked to have this amazing whole bean coffee in our line-up.

We roasted it nice and light right here in Chilliwack, BC to tease out all the nuanced flavours. As soon as it's ground, you can smell bit notes of blueberry and it's very juicy on the palette. There's some subtle floral notes and a lot of sweetness in the cup. It's rounded out by a sweet, slightly warm spice flavour that we couldn't quite articulate until one of the roasters yelled "waffle cone!" and we all nodded in agreement. 

Shakisso, located in Ethiopia's Guji zone within the Oromia region, is renowned for its high-quality coffee production. Established in 2001 by Haile Gebre, Shakisso Farm has played a pivotal role in transforming Guji from a cattle farming area to a prominent coffee-producing region. The farm operates at elevations around 1,800 meters and utilizes natural processing methods, where whole cherries are sun-dried on raised beds. This process imparts distinctive dried fruit notes, resulting in a coffee that is full-bodied, naturally sweet, and exhibits complex flavours.

This is a natural process coffee meaning the coffee cherry has been left on the bean to ferment and then sun dry on raised beds. This results in a sweeter tasting coffee with more fruit-forward notes without the addition of any adulterants or flavours. It's all about the process!
