We love Ethiopian coffees for their clarity and expression — and this Sidamo Grade 1 is a beautiful example of why.
Right away, we’re getting juicy white peach, soft jasmine florals, and a clean, tea-like body. It’s delicate, but not fragile — everything is well integrated, balanced, and easy to come back to sip after sip.
This is a washed process coffee, meaning the fruit is removed from the seed before drying. The result is a cup with high clarity, defined acidity, and a more transparent expression of origin. In this case, that shows up as a refined, almost elegant profile that really highlights the terroir of Sidamo.
From a sensory perspective, this coffee lands with:

It’s a great example of a coffee that’s complex without being confusing — everything is working together.
We’ve roasted this one on the lighter side to preserve that clarity and let those peach and floral notes really show. Push it darker and you’d lose what makes this coffee special.
This is a coffee that shines in pour over and drip, where you can really experience its nuance and structure. It’ll produce a bright, expressive espresso as well, but if you want to taste everything it has to offer, we’d recommend brewing it a little slower.
