Fruity? Sparkly? Delicious? You betcha! This new Ethiopian profile has us swooning.
We LOVE Ethiopian coffees. They tend to be fruity, bright and sparkly. This one is particularly exciting. Not only is it a Grade 1 coffee, but it has a very dynamic cup experience. We get notes of mango, berry jam, big sweetness with a subtle herbaceous/spicy note that reminds us of cola and a wine-like quality, a result of the natural process.
What is natural process? Coffee is a fruit and what we call the "bean" is actually the seed of the coffee fruit. After harvest, often all of the fruit and gooey bits are washed away to produce a clean end product. This is called "washed" coffee. Natural coffee is when some of the fruit is left on the seed and allowed to ferment before being stripped away and dried. This produces more fruity and sweet coffees. This is also where the wine-like flavour and experience comes from. After all, wine is just fermented fruit.
The care and intention put into the cultivating, harvesting and processing of this Grade 1 coffee produces a dynamic, vibrant cup with unique flavour notes without the addition of any adulterants or flavours. It's all about the process. To honour that process, we roast these beans nice and light to let the nuances shine through. If roasted too dark, all that sparkly flavour would disappear and we believe in letting the coffee's natural essence shine and honouring the hard work of all the farmers who work year-round to produce this wonderful single origin coffee.

"Most of the varieties found in Eastern Gedeb are indigenous heirlooms. They adapt better to the environment and seem to give higher quality yields and coffees with the known and celebrated. This lot underwent traditional natural processing and was dried on raised beds. Cherries are turned frequently during drying, and are covered during the hottest hours of the day and at night to control the rate of drying."
